
Color me strange, but oatmeal raisin has always been my favorite cookie. And as an added bonus, when everyone else is chasing the chocolate chip cookies and snickerdoodles of the world, there's no one to compete with for this cinnamon-packed, oatmeal chewy goodness. And so, my oatmeal raisin passion grew stronger. Strong enough, in fact, that I thought it necessary to start finding a healthier version of the treat I loved so much. After all, I didn't want to risk having too much of a good thing. The most obvious issue with any cookie recipe is the large amounts of sugar and butter. In this recipe, I've made modifications to remove the unhealthy bits, maintain the flavor, and keep that gooey texture we all crave. You'll be in love!
- First step, ditch the sugar! Granulated sugar, brown sugar, gone! We'll save the sweetness with a little bit of honey. Besides, cinnamon can do a lot of the heavy lifting if we let it stand up for itself.
- But, but... not the butta! ..... Yes! The butter's got to go. Well, most of it. I'll cut it down to it's bare minimum to shave off all that excess fat and oil.
- Add some protein! No, not beef in cookies, that's gross. Protein powder, silly. There's a reason all the gym buffs swear by their protein powder shakes: it's good for you! To bump up the protein in this recipe, I'll substitute some of the flour out.
Ingredients
1 + 1/4 cup oats (I used traditional, but I believe instant oats will work as well)
1/4 cup flour
1 scoop protein powder
1 + 1/2 teaspoon baking powder
1-2 teaspoons of cinnamon
1 Tablespoon melted butter
1 large egg
1 teaspoon vanilla extract
1 Tablespoon honey
Raisins - as many as you like! They're packed with iron :)
Stir dry ingredients together, then mix in melted butter, vanilla, and the egg. If the mixture seems too dry, just add one tablespoon of milk at a time until the dough starts to stick. Then, mix in the honey and raisins. Drop small spoonfuls onto a greased cookie sheet, add a playful sprinkle of cinnamon on top of each cookie, and bake at 325 degrees for 11-14 minutes. Viola! A sweet treat that you don't have to feel quite so guilty about.
