
Crust. It's always been my favorite part of a pie. In the past, I've even gone so far as to scrape out the fruity pie filling, just so that I could enjoy the flaky, crusty goodness all on its own. Why don't we all do ourselves a favor and just skip the time consuming, less-rewarding pie filling nonsense. When I was younger, my mom started making these pie crust chips, in bite-sized little crisps. Taking only about 15 minutes to prepare, these little treats are the perfect way to satisfy your sweet tooth.

Ingredients:
1 1/3 cup flour
1/2 teaspoon salt
1/3 cup shortening or lard
3 to 4 Tablespoons cold water
Cinnamon
Sugar
1 Tablespoon melted butter

Directions: Mix the flour and salt together first. Then, cut in the lard or shortening into the dry mixture with a pastry cutter one teaspoon at a time. Once the ingredients have become a dry, crumbly pile, add the ice water one Tablespoon at a time until it begins to form into dough. Then, finish up by kneading the dough with your hands and form into a ball.
Roll the dough out on a floured surface. Make sure to add some flour to your hands and the rolling pin before starting as well, otherwise the sticky dough may tear apart. You can roll the dough as thin as you like, depending on how crispy you want your pie chips. I try to get mine to about 1/4" thick. After you transfer the dough to a pan (I used a pizza pan), brush the melted butter onto the top of the dough. You'll sprinkle the sugar and cinnamon on top, as much or as little as you like (I prefer a generous sprinkle of each)!
Bake at 475 degrees for 8-10 minutes, or until the crust starts to brown. After cooling for a few minutes, simply break the crust apart into smaller chips and enjoy!
