
One of my favorite treats anytime in the year is Strawberry Shortcake, but it's particularly perfect as a spring or summer dessert. And when you make them bite-sized, they are great for all kinds of warm-weather events: graduation parties, showers, wedding parties, reunions, or even a backyard tea party.
Start by cutting all the strawberries up into small cubes and mix with sugar. Then, leave the mixture to chill in the fridge while you mix the dough.

For the dough, I followed a recipe by Snappy Gourmet, although it will work other shortcake recipes as well - such as the Bisquick box recipe. After you mix the dough, roll it out on a floured surface no thinner than half an inch. You will probably need it to be a little bit thicker if you plan to cut it in half and put the whipped cream and strawberries on the inside. You can use any small circular cookie cutter to cut the dough. I didn't have one on hand, so I actually used a small circular tuberware to cut the circles. After that, simply bake the shortcakes, and top with whipped cream and the strawberry mixture. Snappy Gourmet even recommends adding a sprinkle of strawberry Pop Rocks to add a little pop to each bite. See the slideshow below for pictures of my process!
